I downloaded a new zip from the commit 453dce726f24. It changed much of the top SDL folder. Folder "Xcode iOS" is missing and Xcode for Mac doesn't compile.

That commit is part of the SDL 1.2 branch – so you're trying to build SDL 1.2 rather than 2.0. The latest commit in the default (SDL 2.x) branch is still 25d1e99080ce, currently.
